The Clark family moved from Alice Springs to the Clare Valley in 1999 for a ‘Cool Change’.
Seduced by the flavours of locally produced olive oil, we planted our own grove with the highly regarded tuscan varieties of Frantoio, Correggiola, Leccino and Pendolino.
The local residences of the surrounding bush (feral deer and kangaroos) were delighted in the smorgasbord of tender young trees on offer. After this initial setback, the grove is now thriving and in 2005 we had our first commercial harvest.
We manage the grove using organic principals, although we are not certified organic.
Our olives are handpicked in stages as they ripen. They are processed soon after picking and left to clarify before being bottled a few months later. The resulting oil is a full flavoured oil, with lovely fruit and pepper flavours.
In the Clare Valley our oil can be purchased from several cellar door outlets and local cafes.

Ideal used as a dipping oil for bread, for bruschettas, and in salad dressings.
Drizzle over steamed or baked vegetables.
Use in freshly prepared pasta sauces.
Drizzle over sandwich fillings in place of butter.
